Amongst the many things to think about when designing your wedding cake, it’s worth considering how to maximise the impact when you and your guests see it first.  

 

It’s a significant centrepiece to your reception… and you want to set up your wedding cake for your guests to say “wow”!

Achieving the best look for your cake will vary according to your venue.  For example, if you are holding your reception in a room amongst the white marble and chandeliers then your cake will need either considerable sparkle, or some touches of colour to stand out…a white cake will simply fade into the paintwork.

The awards showcase the best wedding suppliers throughout the country.  Bay Tree Cakes hopes to win the best Cake Designer in the East Midlands region and make it through to the national finals.   Winners are not only chosen based on scores given by couples who have got married over the last year but also a team of expert judges from the cake making industry also review the entries.

Cake Decorator Required!

We are now looking for a person to join the growing team at Bay Tree Cakes. We need someone with sugar craft experience, including the modelling of flowers and characters who is looking to grow their skills and is able to work to deadlines. Some additional training will be given as necessary. The person will need to work with us 1-2 days a week (likely to include a Thursday/Friday).

Initially we are looking for someone until Christmas but hopefully this will become a long term permanent contract.

At Bay Tree Cakes we are often asked to take into account the needs of allergy sufferers at Weddings and other parties.  This, of course, not only affects brides and grooms with allergy issues, but also those with friends and family members who may be affected.  We sometimes get people who think that they cannot even have a cake which will cater for allergy sufferers.  However with a little bit of planning no one needs to miss out. 

As a mum of two children who were born with a dairy allergy I know how uncertain people can be when choosing their cake maker.  I also find myself regularly asked to make birthday cakes for nut-allergic or gluten-intolerant children who have never had a “proper” birthday cake!  So I feel very strongly that no-one should have to make big compromises on their birthday or wedding day. 

The most common allergies we encounter are nuts or peanuts, gluten & wheat, eggs, and dairy products, although we are happy to work to other special diets when asked.  We now only use flour and sugar that is produced in nut free environments.  We also source cooking fats and icings that are free from most of the common allergens.  Read on....

One of the most exciting cake trends of the past few years has been to return to elegant and classic styling in wedding cakes including Lace Wedding Cakes. This is not simply a roll out of old design ideas, but recognition that there is a place for the detailed designs and piping skills that were beginning to die out in the cake world…and might have been lost forever.

However, as most modern wedding cakes are made of sponge cake or partly of sponge, these do not have a long “shelf life”.  As a result, cake designers cannot afford to spend days decorating cakes with intricate royal iced piping.

But…whenever there is a challenge, someone will try and solve it…so a number of manufacturers have created products that allow cake designers to produce intricate designs that do not require days of setting and drying, and so are suitable for more modern cake needs. Of these, the one we love the most is Edible Lace!
